What do we know about chia?

Well firstly you may already know that chia seeds are a favourite among those that work in wall-street, celebrities, nutritionists and health food advocates. Dr Oz also spoke about chia seeds on Oprah, gaining them even greater publicity.

Chia plants were also grown by the Aztecs and were thought to have been a substantial part of their diet.

They are known as Salvia hispanica, it is part of the mint family and is a flowering plant.

Associated mostly with Mexico and Guatemala, chia seeds are gaining rapid momentum in popularity in the United States and Europe. Globally we are all becoming more conscious about what we eat and what is beneficial for our health. We are only just tapping into the positive effects that nuts, grains and seeds can give us.

Chia seeds are especially sought after as they are packed full of nutrients and are easy to cook with. They do not have an over powering taste, which makes them an ideal food accompaniment and you can now buy them fairly cheaply on-line. (They are available from many supermarkets and health food stores, but they are more expensive.)

  • 8oz Sprouted chia seeds
  • 1/4 Large cucumber
  • 2 Celery sticks
  • 4 table spoons Balsamic vinager
  • 4 table spoons Extra virgin olive oil
  • 2 Medium tomatoes
  • 1 medium Roll Chiabatte bread

Instructions

  1. Wash and cut the celery sticks into thin slices.
  2. Slice the tomatoes.
  3. Slice and toast the chiabatte bread and cut into croutons.
  4. Mix all the igrediaents together and add the balsamic vinager and extra virgin olive oil.
